Dinosaur Kale has been grown in the Tuscany region of Italy since the eighteenth century. It is also commonly referred to as "Tuscan Kale". The dinosaur name comes from the bumpy texture of the leaves that resemble what dinosaur skin is thought to have looked like.
This type of kale has been a key ingredient in minestrone soup for hundreds of years. Kale has many anti-oxidants and is considered by many to be a "super food". It is also becoming quite popular when toasted to make "kale chips", which are popular with quite a few kids. Dino Kale is also a key ingredient in many "green" smoothies.
Another of our favorite uses is to make "massaged" kale salads - the leaves are rubbed with olive oil and then dried fruits, chopped apple, shredded carrots, nuts, etc can be added. These salads are surpringly naturally "sweet" tasting and are often appreciated by dinner guests who woulid never have been expected to enjoy a kale salad!
This type of kale is sweeter and more delicate than curly kale and it was even noted to have been grown by Thomas Jefferson in his gardens. It grows up to three feet tall and can be harvested for weeks after hard frosts and freezes have killed other plants. Along with brussle sprouts, it's the last plant standing in the garden.
Days to maturity vary, but the plant should be started from seed indoors as it has a relatively lengthy maturation cycle.
