Butternut is a type of winter squash. It has a sweet, nutty taste similar to that of a pumpkin. It has tan/yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It grows on a vine. The most popular variety, the Waltham Butternut, originated in Waltham Massachussettes where it was developed at the Waltham Experiment Station.
Light tan-colored winter squash with small seed cavities and thick, cylindrical necks without crooks. Uniform fruits avg. 9" long, avg. 4-5 lb. Even close to 50 years since hybridizing, Waltham is still by far the most widely grown full-size butternut. Avg. yield: 4-5 fruits/plant. This squash will store for months on end in a cool, dry spot.
Although a fruit, butternut squash is used as a vegetable that can be roasted, toasted (seeds), pureed for soups (amazing) or mashed and used in casseroles, breads, and muffins. It also makes wonderful "pumpkin" pies.
